saman’s kurdish
lentil soup
Ready in 25 minutes
Serves 2-4 people
Ingredients
One onion, Sliced and Diced
Two Garlic Cloves, Finely chopped
Two Tablespoons Olive Oil
¾ cup Red Lentils
One beef Stock Cube
Kurkuma/turmeric black pepper, salt, sweet pepper flakes to taste
Fresh lemon wedges
preparation
Heat the oil in a medium saucepan
Reduce heat to low, add garlic, onions and saute until soft and golden
Add one liter water, and allow to boil
Add lentils and beef broth
Cook for 10 - 15 minutes at a boil
Reduce to simmer, add spices, and puree
Simmer for 5 - 10 minutes
Garnish with fresh onion slice, fresh bread pieces and fresh lemon wedge on the side
Serve hot, with green salad of your choice
