lentil soup

Ready in 25 minutes

Serves 2-4  people

 

Ingredients

  • One onion, Sliced and Diced

  • Two Garlic Cloves, Finely chopped

  • Two Tablespoons Olive Oil

  • ¾ cup Red Lentils

  • One beef Stock Cube

  • Kurkuma/turmeric  black pepper, salt, sweet pepper flakes to taste

  • Fresh lemon wedges

preparation

  • Heat the oil in a medium saucepan

  • Reduce heat to low, add garlic, onions and   saute until soft and golden

  • Add one liter water, and allow to boil

  • Add lentils and beef broth

  • Cook for 10 - 15 minutes at a boil

  • Reduce to simmer, add spices, and puree

  • Simmer for 5 - 10 minutes

  • Garnish with fresh onion slice, fresh bread pieces and fresh lemon wedge on the side

  • Serve hot, with green salad of your choice
