nora’s irish stew
ingredients
One medium turnip, peeled & sliced
Three parsnips, peeled & sliced
Six carrots, peeled & sliced
Two onions, peeled & sliced
One lb lean stewing beef, cubed, floured and lightly browned in a saute pan
Two beef stock cubes
preparation
Bring six cups of water to a boil in a heavy pan
Add vegetables
Add beef
Add stock cubes
Stir gently until water returns to a boil
Simmer at a low heat for 90 minutes
Serve with crusty bread and butter
Ready in 90 minutes
Serves 4-6 people
